When the temperatures drop, what better way to get cozy than with a nice hot bowl of soup. Something that will make you feel warm and comfy and a cold day. Vegan sopas (soh-pahs), it’s comforting, it’s creamy, it’s delicious, and it’s hearty. Packed with vegetables, macaroni, and vegan hotdogs, this soup will definitely fill you up. It’s the ultimate comfort food!
What is Sopas?
Sopas basically means chicken noodle soup. I mean, there really isn’t a direct meaning for it, but for us Filipinos when you say sopas, we know what it is. This Filipino soup is cooked in a broth with milk, and filled with a bunch of vegetables such as carrots, celery, cabbage, and garlic and onions. And hotdog, another classic Filipino thing to add, it might sound odd, but it’s definitely not complete without it. Sopas is filling on its own but for a heartier meal, I usually eat it with warm pandesal, or any other tasty bread.

My mother always made this for me and my brother, not only for cold and rainy days, but also for when we were sick and especially after New Year’s day. It brings back so many memories and it definitely makes me miss my mom a lot. There are a variety of ways to make this, but my mom taught it to me this way. I have seen some recipes that add bell peppers and even celery, but I wanted to keep it as close as the way my mom made it. And it’s also the fact that both my mom and I don’t exactly love celery that much haha.
This soup originally calls for chicken and evaporated milk, but we all know that this is a plant-based blog. So I tested this dish a couple times with vegan “chicken” and honestly, I didn’t enjoy it as much. Most of these mock meats already have their own flavor added, and it threw me off. So, basically, I left it out, and honestly, I prefer it without it. The vegan hotdogs were enough for me. But if you are curious, you can totally add in whatever you want.

Vegan Sopas (Filipino Macaroni Soup)
Equipment
- Chopping Board
- Chef's knife
- Vegetable peeler
- Can opener
- Measuring cups
- Measuring spoons
Ingredients
- 3 tablespoons Vegan butter
- 3 Vegan hot dogs (thinly sliced, I used Light Life)
- 3 cloves Garlic (minced)
- 1 Medium onion (roughly diced)
- 1 Medium carrot (chopped into coins)
- 2 tablespoons Better Than Bouillon Vegetable Paste
- 6 cups Water (plus more)
- ½ Medium cabbage (chopped into bite-size pieces)
- 1 can Vegan evaporated milk (see notes)
- 1 ½ cups Elbow macaroni noodles (ensure it's vegan friendly!)
- Salt and pepper (to taste)
Instructions
- Heat oil in a large pot over medium heat. Add in the vegan hotdogs, and cook until it has lightly browned. Carefully remove from the pot and set aside until ready to use.
- To the pot, add in the minced garlic and saute until lightly browned.
- Next, add in the onions and carrots. Continue to saute until the onions are tender, about 3 minutes. Then add in the water and let it come to a boil.
- Add in the vegetable broth paste, and mix until it has fully dissolved. Cover and continue to boil for 5 minutes. Then add in the macaroni noodles, and cover the pot and allow it to cook until tender, about 5 minutes.
- Add the cabbage, and cook for 3 to 5 minutes. Add more water if needed. Pour the coconut evaporated milk and stir to heat through. Lastly, add in the vegan hot dogs, salt and black pepper. Serve and enjoy!
Notes
- If you can’t find Better Than Bouillon, you can skip it and replace the 6 cups of water with 6 cups of vegetable broth.
- If you can’t find coconut evaporated milk, you can substitute for 1 cup of unflavored non-dairy milk. I’ve used soy milk before and it tastes just as great.
- You can add soy curls or any vegan chicken meat substitute. If you’re going to use soy curls, don’t forget to rehydrate them in hot water before adding it to the soup. I would also saute it when you add in the hotdog and get it a little bit browned all over.
