    Vegan mais con yelo is a veganized version of a popular Filipino dessert made up of sweet corn, ice, and milk. Sounds odd? Well, it isn’t! It’s quite delicious, super refreshing, and very easy to make. The perfect treat for those summer days!

    What is Mais con Yelo?

    The name Mais con Yelo or (Maiz con Hielo in Spanish) means “corn with ice”. People enjoy it during hot weather as a cool and sweet treat. Mais con yelo began as a simple and affordable dessert in the Philippines, especially when corn was abundant. It was a kind of recipe created by using whatever ingredients were on hand. But, overtime, Filipinos loved mais con yelo for its simplicity and delicious flavors.

    These types of Filipino shaved iced desserts, like halo-halo or avocado con yelo are my mom’s favorite type of dessert. She doesn’t like the baked treats, but if you give her mais con yelo or halo-halo she’s all for it. When we were little, we used to make these types of desserts a lot. So making this recipe is very nostalgic for me!

    • Made with simple ingredients. Unlike halo-halo, you won’t need to buy several ingredients. Plus, they are easily accessible!
    • Easy to customize. This vegan mais con yelo recipe will use the most basic ingredients, but you can add in other mix-ins!
    • Easy to assemble. The best part of this recipe is that it doesn’t require you to cook anything. All you need to do is to assemble! You’ll have a refreshing dessert in no time.

    ✏️Ingredient Notes

    • Sweet corn kernels - I used canned sweet corn, but you can also use frozen or fresh.
    • Creamed corn - This adds a creamy and slightly thick consistency to the dessert, enhancing the texture and flavor profile.
    • Vegan-sweetened condensed milk - Some recipes add granulated sugar, but I find that using condensed milk gives a creamier texture. My favorite brand to use is Nature’s Charm.
    • Non-dairy evaporated milk - Using evaporated milk adds to the creaminess and flavor. My favorite brand to use is Nature’s Charm.
    • Corn flakes - Depending on where you get your mais con yelo, you’ll find some with or without cornflakes. I like to add it because it adds a nice crunch!
    • Vegan ice cream - You’ll find mais con yelo usually topped with some kind of ice cream like corn ice cream or cheese ice cream. But to make this recipe easy, I used a vegan vanilla ice cream.

    📝Substitutions & Variations

    • Don’t like corn? Then try my avocado con yelo recipe!
    • Want to make this better? Like halo-halo you can add a variety of mix-ins like sweet red beans, nata de coco, or my favorite leche flan.
    • If you don’t have a shave ice machine, you can make a milk shave ice hack. Freeze milk sugar and condensed milk in a freezer-safe bag, then crushed. It won’t be the same as shaved ice, but it’s a good alternative.

    🍴How to Make Vegan Mais con Yelo

    Step 1: Firstly, in a tall serving glass, add creamed corn and vegan sweetened condensed milk.

    Shaved ice added on top of the cream corn.

    Step 2: Next, add shaved ice.

    Non-dairy evaporated milk poured over top, and more shaved ice added.

    Step 3: Then, pour non-dairy evaporated milk. Add more shaved ice if needed.

    Topped with sweet corn kernels, cornflakes, and vegan vanilla ice cream.

    Step 4: Lastly, top it off with sweet corn kernals, cornflakes, and vegan vanilla ice cream!

    Ube Mais con Yelo Alternative

    Want to switch it up? Use my vegan ube ice cream to top it off. Not only will it turn this dessert purple, but it’ll also add some ube flavor!

    Unfortunately, no. vegan mais con yelo is best served as soon as it’s assembled.

    Ingredients
      

    • 3 tablespoons Creamed corn
    • 2-3 tablespoons Vegan sweetened condensed milk
    • Shaved Ice
    • ¼ cup Non-dairy evaporated milk (add more if needed)
    • 3 tablespoons Sweet corn kernels
    • 2 tablespoons Cornflakes
    • 1 scoop Vegan vanilla ice cream (or vegan ube ice cream)

    Instructions
     

    • In a tall serving glass, add creamed corn and condensed milk.
    • Add shaved ice.
    • Add sweet corn kernels and pour non-dairy evaporated milk.
    • Top it off with ice cream and cornflakes! Mix and enjoy!
