The star of this drink is the ube cold foam. It’s rich, light, and full of ube-flavored goodness. Paired with some cold brew coffee or even iced matcha, you’ll have the ultimate pick-me-up treat!
Something about me is that I love a good cold brew coffee, whether I make it at home or buy a big jug, I at least have one cup every afternoon. I was so surprised when I saw that Merit Coffee Co. had an ube cold foam on their menu. They’re not an Asian coffee shop, so I didn’t think they would create a drink like this. However, they do use real dairy in their cold foam. So, you already know that I had to recreate it at home.
I knew this would be easy to recreate because I already have a cold foam recipe! Which I used in my vegan pumpkin cream cold brew recipe. It just needed a little bit of tweaking, and voila, the vegan ube cold cream cold brew was born!

✏️Ingredient Notes
- Dairy-free heavy whipping cream – Vegan heavy cream is necessary to create the ube cold foam layer that floats on top of the cold brew coffee. My favorite brand to use is Silk.
- Dairy-free milk – Adding a touch of milk helps loosen the texture of the cream so that it won’t turn into whipped cream. I like using oat milk but use any milk you prefer.
- Powdered Sugar - A touch of sugar adds a hint of sweetness that balances out the flavor of the coffee.
- Ube Extract - Ube extract is a condensed version of ube, so a little goes a long way. I like using both Butterfly and the McCormicks brands.
- Cold Brew Coffee - I usually prepare my own cold-brew coffee, but you can also buy it at the grocery store. My preferred brand is Stok.

📝Substitutions & Variations
- Don’t like drinking coffee? Try it with matcha! Iced matcha with ube also makes a perfect pairing!
- Prefer agave or maple syrup as a sweetener? Swap it out in place of the powdered sugar.
- If you can’t find dairy-free heavy whipping cream, you can use full-fat coconut cream or coconut milk. These are very thick in texture and will be able to whip up using an electric hand mixer.

🍴How to Make Vegan Ube Cream Cold Brew
Step 1: In a measuring cup or bowl, combine dairy-free milk, dairy-free heavy whipping cream, ube extract, and powdered sugar. Mix the milk with a frother/electric hand mixer until it is thick and creamy.
Step 2: Next, add ice to your favorite glass and pour some cold brew. Then, top it off with the ube cold foam. Stir and enjoy!
🍵 Matcha Alternative
Not a coffee drinker? Try this ube matcha latte alternative! Ube and matcha make a great pairing. The ube doesn’t overpower the matcha’s delicate flavor, so they work together so well.
To make this drink, make your matcha latte as you normally would and add the ube cold foam on top!

Vegan Ube Cream Cold Brew
Equipment
- Measuring cup or small mixing bowl
- Tall drinking glass
Ingredients
- 3 tablespoons Dairy-free whipping cream (see notes for substitutions)
- 1 tablespoon Dairy-free milk (I used Oatly)
- ½ teaspoon Ube extract
- 2 tablespoons Powdered sugar
- 1 cup Cold brew coffee (or matcha latte)
Instructions
- In a measuring cup, combine dairy-free milk, dairy-free heavy whipping cream, ube extract, and powdered sugar.
- Mix the milk with a frother/electric hand mixer until it is thick and creamy.
- Add ice to your favorite glass and pour some cold brew or matcha latte.
- Top it off with the ube cold foam. Stir and enjoy!
Notes
- Can I make this sugar-free? You can try using Stevia or your favorite sugar-free alternative, but I haven’t tried it myself, so I can’t say how it’ll turn out.

- How to make coconut whipped cream:

- Chill a can of full-fat coconut cream or milk in the fridge the day before. After 24 hours, open the can and scoop out the solidified coconut cream. Try to avoid the water as much as you can.
- Then add the ube extract and powdered sugar, and whip the cream for about 1 minute until light peaks form. Don't overmix as it can separate. The dairy-free milk for this version is not needed for this version.
