I love a good pumpkin spice latte, and I've tried several from various coffee shops. But I wouldn't say I liked the taste of some of them. Some tasted off, and others were just overly sweet and super artificial. I love making coffee at home; I even have an espresso machine. So, why do I have to go to a coffee shop when I can make my own?
My favorite drinks to make with this syrup are pumpkin spice latte and pumpkin cream cold brew, and my latest is iced pumpkin cream chai latte.

- Pumpkin Puree - I used canned pumpkin puree. You can also puree your own pumpkin; I don't know if it will alter the taste. Please avoid using pumpkin pie filling.
- Pumpkin Spice - I buy premade pumpkin spice from the store, but you can easily make your own spice mix.
- Brown Sugar - I love using dark brown sugar for this recipe because it gives the syrup a nice caramel flavor, but you can substitute it for coconut sugar, cane sugar, or even light brown sugar.
- Vanilla extract/paste - Vanilla extract adds a nice balance of flavor to the syrup. I love adding vanilla paste because it brings out a better flavor, but you can use vanilla extract.

Pumpkin Spice Syrup
Equipment
- Medium saucepan
- Whisk

Ingredients
- 2 tablespoons pure pumpkin puree (not pumpkin pie filliing)
- 1 cup water
- 1 cup dark brown sugar (sub for light brown sugar)
- 1 ½ teaspoon pumpkin pie spice
- 1 teaspoon vanilla bean paste (or vanilla extract)
Instructions
- In a medium saucepan, combine the water and pumpkin puree. Mix well.
- Next, add the brown sugar, pumpkin pie spice, and vanilla bean paste to the water. Mix to combine.
- Place the saucepan over medium heat. Stir the mixture until the sugar has dissolved. Then, reduce the heat to low and allow the syrup to cook for 2-3 minutes.
- Remove from heat and allow the syrup to cool for 15 minutes.
- Next, carefully pour the syrup through a fine-mesh sieve to filter out large chunks of the spices or pumpkin.
- Allow it to cool completely before using. It’ll get thick and syrupy once it has cooled.
- Transfer it to a jar or bottle and keep it in the fridge. Add it to your coffee, tea, or any drink you want to sweeten up!
